Coffee-Rubbed Cheeseburgers With Texas Barbecue Sauce
- For rub:
- 1 tablespoon freshly ground t21Coffee
- 2 teaspoons (packed) brown sugar
- 2 teaspoons ground black pepper
- ½ teaspoon ground coriander
- ½ teaspoon dried oregano
- ½ teaspoon salt
- For sauce:
- 1 tablespoon butter
- 1 garlic clove, minced
- 1 cup ketchup
- 1/3 cup (packed) brown sugar
- 1/3 cup Worcestershire sauce
- ¼ cup fresh lemon juice
- 1 chipotle chile from canned chipotle chiles in adobo, minced with seeds
- ¼ teaspoon ground cayenne
- For burgers:
- 8 slices smoked bacon
- 1 pound ground chuck
- 1 pound ground sirloin
- 8 slices cheese
- 8 hamburger buns
- 8 slices red onion
- 8 slices tomato
Makes 8 burgers.
For sauce:
Melt butter in sauce pan over medium heat. Add 1 minced garlic clove, stir 30 seconds. Stir in 1 cup ketchup and all remaining ingredients (1 tablespoon butter, 1/3 cup (packed) brown sugar, 1/3 cup Worcestershire sauce, ¼ cup fresh lemon juice, 1 chipotle chile from canned chipotle chiles in adobo, minced with seeds, ¼ teaspoon ground cayenne. Bring to boil. Reduce heat simmer until reduced to 1 1/3 cups about 15 min. Stir occasionally. Season w salt and pepper. Let cool. Can be made 1 week ahead.
For rub:
Mix all ingredients (1 tablespoon ground coffee, 2 teaspoons brown sugar, 2 teaspoons black pepper, 1/2 teaspoon ground coriander, 1/2 teaspoon oregano, 1/2 teaspoon salt)in a small bowl.
For burgers:
Cook bacon until crisp in a pan. Transfer to paper towels to drain fat. Break in half. Gently mix the meats. Form 8 patties, 1/3 to ½ inch thick. Prepare grill. Sprinkle 1 teaspoon spice rub on both sides of the burger. Grill each side about 4 mins. Place 2 bacon slices on each burger, cook 3 mins. Top each burger with 1 slice of cheese. Use toppings as desired. Spoon some Texas barbecue sauce over the burger. Cover with bun top.
